Pasta con le carote e vodka

Pasta con le carote e vodka

Promised to Martha I would post this one.
Taking the opportunity to make it for lunch.

  • 8 carrots p grated
  • tomato sauce
  • 1 cube of beef stock
  • half an onion
  • butter
  • olive oil
  • black pepper
  • vodka
  • 500g sedanini or penne

Chop the onion and fry in a pan.
When almost cooked, throw in the grated carots, and try fry for a minute.
Add just enough tomato sauce to bring all the ingredients together and keep moist, crumble over the cube of stock and stir.
Cover and cook for 15 minutes, stirring every now and then.

Add freshly grounded pepper and a liberal amount of butter (a tablespoon should do it - or more as you prefer). Leave covered for the tastes to mingle.

Cook the pasta in plenty of salted water in accordance with the instructions on the packet and your taste.

Add 2 or 3 tablespoons of vodka to the carrot mix and stir.
Drain pasta and toss into the carrot mixture.


Special Notes:
I always make plenty of the carrot mixture because it is lovely to eat as a side dish too (without the vodka).

If you use vegetable stock instead of beef the meal is perfectly suitable for vegetarians.

It is important to let the mixture cool a little before adding the vodka otherwise it will evaporate completely.
However, if you don't like vodka, it can be skipped entirely. The recipe is great also without.

Oh and another thing, I just thought of:
Don't you DARE add cheese to the pasta. I am serious here: The carrots are not having any of that nonsense.

Used Mezzi Rigatoni here. Mezze Maniche or Rigatoni work fine too.
And there was a good portion of carrots to eat as second dish.

    Molto, molto grazia! After the weekend I just had, I need all the vitamins I can get. Many apologies for not reading and responding sooner - I really have been burning the candle anywhere it would lite these last few days.

    Now I have a dear friend from Finland visiting and he is coming to dinner tomorrow and I will make this for us.
    So thank you again!

        Its not something I do very often - not to this extent anyway, but with the Solstice, friends arriving, restaurants opening - ARGH!!!
